Traditionally, pumpkins are associated with Halloween, but we promise you there’s nothing spooky about this wonderful pumpkin coffee! You’re probably familiar with bulletproof coffee as a ketone energy booster for a morning kickstart. The addition of pumpkin and spices makes this variety extra special, delicious and warming. Just the keto treat that you need on a chilly autumn or winter evening!

Which MCT Oil to use?

Serves: 1

Ingredients

  • 1 cup of espresso coffee 
  • 20 gr pumpkin  
  • 125 ml full-fat cream
  • 1 tbs MCT Oil* 
  • 1 tbs butter 
  • 1 ts winter spice mix (e.g. with cinnamon, ginger, nutmeg, cardamom)
  • Erythritol 
  • Cinnamon

Preparation

  1. Dice the pumpkin and cook it for 20 minutes in water. Drain and mash to a fine pulp. 
  2. Pour 100ml of the cream into a saucepan and add the winter spice mix, the butter and the MCT oil.  
  3. Over low heat, gently stir the mixture until the butter is melted.  
  4. Add the pumkin mash, stir well and heat slowly until the mix is hot through and through. 
  5. Pour the mix into a cup or tall glass.  
  6. Add the coffee and Erythritol to taste. 
  7. Whip the rest of the cream with some Erythritol. 
  8. Top the coffee with the whipped cream and finish with a sprinkling of cinnamon for decoration.
