Doesn’t everybody love cheesecake? It’s always nice to make a cheesecake for birthdays and other parties – you simply can’t go wrong with it! And the best thing is: with some minor adjustments, it can fit perfectly into the keto diet. We’ve got your back with this great keto cheesecake recipe by Go-Keto ambassador Simone Ruther. It’s tasty, easy to make and 100% keto proof.

Cheesecake and keto: a match made in heaven

This cheesecake is the ultimate cake when you’re on keto, as it is loaded with all the good stuff that fits the keto diet, meaning cream cheese, eggs and a bit of low-carb fruits. The core ingredients of cheesecake are very low in carbs and high in healthy fats. That’s the way we like it! What’s also great: to make a delicious keto cheesecake, you only have to make a few adjustments to the original recipe, except for the flour for the base and the sweetener. Sounds doable, right? It is! You won’t even taste the difference with a regular carb-rich cheesecake, and that’s a promise.

The why of whey

To make the cheesecake the perfect treat after a workout, it’s been upgraded for extra health benefits by adding proteins to this recipe. The whey proteins help your body recover after a workout but are also great for your body at other moments of the day. Scientists have shown that the use of whey has great health benefits for men and women of all ages, and it helps you feel satisfied and stay healthy when you’re on a keto diet. Perfect Keto Whey Protein Powder comes with added MCTs and has a nice vanilla flavour, which perfectly fits this cheesecake recipe.

Top it off with fruits

In this recipe, the blueberries will add a lovely summery taste of fresh fruit. And as blueberries are low in carbs, you can enjoy them without feeling guilty about it. An alternative way to top off your keto cheesecake, is to use our Go-Keto Fruit spreads! They’re simply yummy and they come in two terrific flavours. Simply choose the one you like and spread it out on top. This keto cheesecake with blueberries or Fruit Spread will taste just like the cheesecake from you pre-keto days and it really is your go-to recipe if you’re in need of some guilt-free sweetness in your keto life. Enjoy!

Serves: 10

Ingredients

For the crust

  • 120g almond flour
  • 40g Perfect Keto Whey Protein Powder MCT Vanilla
  • 15g coconut flour
  • 60g coconut oil
  • Some ground vanilla
  • Grated lemon peel – 70g erythritol
  • 1 egg
  • 2-3 spoons of cold water

Cheesecake filling

  • 500g fresh cream cheese
  • 50g sour cream – 30g Perfect Keto Whey Protein Powder MCT Vanilla
  • 100g whipped cream
  • 2 eggs
  • 8g egg white – 100g erythritol
  • 200g blueberries

Preparation

  1. Preheat the oven at 175°C.
  2. Mix everything together for the crust pastry, roll it out and put it in a springform pan.
Tip: first place a sheet of baking paper on the bottom of the springform pan, then snap the ring of the springform pan onto it and cut of the excess paper along the outside. This way, it will later be easier to remove the cake from the springform pan.
  3. Mix the cheesecake filling and put it in the form. Add the blueberries last and place the cheesecake in the oven for 40 minutes at 175 degrees.
  4. Let it cool down afterwards, because the mixture is still soft.
