Ingredients

For the crust

  • 120g almond flour
  • 40g Perfect Keto Whey Protein Powder MCT Vanilla
  • 15g coconut flour
  • 60g coconut oil
  • Some ground vanilla
  • Grated lemon peel – 70g erythritol
  • 1 egg
  • 2-3 spoons of cold water

Cheesecake filling

  • 500g fresh cream cheese
  • 50g sour cream – 30g Perfect Keto Whey Protein Powder MCT Vanilla
  • 100g whipped cream
  • 2 eggs
  • 8g egg white – 100g erythritol
  • 200g blueberries

Preparation

  1. Preheat the oven at 175°C.
  2. Mix everything together for the crust pastry, roll it out and put it in a springform pan.
    Tip: first place a sheet of baking paper on the bottom of the springform pan, then snap the ring of the springform pan onto it and cut of the excess paper along the outside. This way, it will later be easier to remove the cake from the springform pan.
  3. Mix the cheesecake filling and put it in the form. Add the blueberries last and place the cheesecake in the oven for 40 minutes at 175 degrees.
  4. Let it cool down afterwards, because the mixture is still soft.
