Are you ready? Today we are treating you with a recipe for stuffed roast beef with mushrooms and walnuts. Perfect to serve as the main course for those on non-keto and keto alike!

Serves: 6

Ingredients

  • 1,5 kg roastbeef
  • 250g mushrooms (any type you prefer, or mix them up)
  • 60g walnuts
  • 60g bacon
  • Fresh rosemary
  • Coriander
  • 3 cloves of garlic
  • Olive oil
  • Salt, pepper and turmeric

Preparation

  1. Chop the mushrooms, walnuts, garlic and coriander
  2. Pour a little olive oil into a large skillet over medium heat and fry the chopped ingredients
  3. Add salt, pepper and turmeric to taste
  4. Leave to cool before mixing in a food processor

Next:

  1. Cut the roast beef longways stopping 1cm from the bottom
  2. Then cut the roast beef like an “open book”, then roll out the meat
  3. Spread the mushroom and walnut mixture evenly over the top
  4. Roll it all up and tie with kitchen twine
  5. Preheat the oven to 210 °C
  6. Sprinkle a little water on the bottom of an oven dish and place the beef on it
  7. Add some olive oil and season with salt and pepper
  8. Place the beef in the oven for about 30 minutes
  9. Take the roast beef out of the oven regularly to taste, same with the liquid in the baking dish. You want to make sure that it doesn’t become dry

Finally:

  1. Remove the dish from the oven after 30 minutes and cover for a further 10 minutes
  2. Once the meat has cooled, begin to carve

Serve the roast beef with a mixed salad, cauliflower mash, grilled vegetables and your favourite sauce! You could also switch the filling yourself. For example: foie gras instead of bacon, or spinach instead of mushrooms.
