Just to prove how easy and fun keto baking can be, our ambassador Mélanie Simon from France developed this delicious and fast recipe for Vanilla Muffins. How about having them for breakfast? You can easily make the batter in just 5 minutes, take a shower while they’re in the oven – and enjoy them to the full, with your morning coffee.  

Most of the ingredients should be stock material in your keto pantry: eggs, almond flour, almond milk, the keto sweetener Erythritol and baking soda – if you haven’t got them yet, we advise you strongly to jot them down on your shopping list straightaway, to make sure you have them at hand next time the baking inspiration takes you! 

Next to those, Mélanie introduces two very special ingredients that give this recipe its magic…  

Magic ingredient #1: orange blossom water 

The first is orange blossom water, a delicious ingredient for adding a delicate and fresh orange blossom flavour to your baking, vegetables, salads and meat – it’s especially great with roast chicken with lemon and ground cumin. It’s very popular in the Middle East and Moroccan cuisines and available in shops that sell food from those regions. You can also find it more and more often in regular supermarkets.

Magic ingredient #2: Go-Keto MCT GEL Bomb

If you’ve already tried it, our favourite keto energy booster needs no further introduction – you know it’s the perfect, delicious, superfast vanilla-flavoured MCT on-the-go energy snack. Yet even if you know how good it is straight from the sachet, using it for baking is probably a wonderful novel idea! Trust Mélanie to make something to make your palate go in WOW-mode…

There’s just one thing for it: try them yourself as soon as you can!

Serves: 4

Ingredients

  • 100g Organic almond flour 
  • 2 eggs 
  • 50ml unsweetened almond milk 
  • 2 sachets Go-Keto MCT GEL Bomb Vanilla  
  • 50g Erythritol 
  • 1 tsp baking soda 
  • 1 tbsp orange blossom water 

Preparation

  1. Preheat the oven at 180 °C. 
  2. Put the almond flour, eggs milk, Go-Keto MCT Bomb, Erythritol, baking soda and orange blossom water in a bowl. 
  3. Whisk the ingredients together until the mixture is smooth and without lumps. 
  4. Put the mixture in a silicone muffin mould. 
  5. Place in the oven for about 25 minutes. 
  6. Remove from the oven and let the muffins cool down. Enjoy!
